Why are some cells grey?

Because the exchange did not publish a 24h open for that instrument, so the percentage cannot be derived. The cell goes grey with an explicit dash rather than a green zero.

What if I cannot distinguish the colours?

Every cell prints its percentage as a number alongside the colour, so reading the map never depends on colour vision. The site's colourblind theme also swaps the up/down pair to blue and orange.

Why is only part of the market shown?

What a heatmap is for

A heatmap answers one question at a glance: where did money go today, and was the move broad? If most cells share a colour the market moved as one, and there is probably a macro driver. If a few large cells are green while the rest are red, the move is confined and generalising from it is a mistake. Size matters too: a small name up 40% on negligible turnover is a market where getting in and out is expensive.
